PIGSKIN POPPERS

10-12 Large Jalapeno Peppers
2 pkgs of Cream Cheese
1 cup of shredded cheese (preferrably cheddar or Mexican style)
1-2 packages of bacon

Slice the jalapenos in half.  Remove all the seeds and veins.  NOTE:  the veins are what gives the pepper its kick, so if you want your poppers to be hot, don't remove the veins.  

In a bowl, add the cream cheese and the shredded cheese and mix well.    Stuff each half of the jalapenos with the cheese mixture.  Wrap each half pepper with a slice of bacon and secure with a toothpick.

Set your grill to medium heat and grill the poppers.   Turn the poppers often, making sure the bacon is cooked thoroughly.

This is an easy tailgate appetizer because you can prepare the poppers the night before and just throw them on the grill on gameday.
