Thanks to my sis Helen for this great recipe. I guess this means you've forgiven me for all those years that I chased you around with frogs and crawfish and for the times I tried to set you up on dates with complete strangers.
1 lb Italian Sausage (either mild or hot – your preference) cooked and crumbled
1 package of bacon (I use the smoked) cooked and crumbled
3 to 4 cooked potatoes – sliced in about ¼ inch slices) (I cook them in the microwave and stick them in the freezer for about 15 minutes to cool down)
12 large eggs, beaten with ¼ cup of milk
1 to 1 ½ cups of cheese (I use sharp cheddar mixed with jack because I like the combination of the two)
Salt and Pepper (or garlic salt – which I use) to taste
Optional: 1 can of mushrooms, diced roma tomatoes, 1 can of the diced green chiles, and/or diced green onions
Mix all of the ingredients together and pour into a 9X13 baking pan that has been sprayed with Pam. Bake at 350 degrees for about 35 to 45 minutes or until the eggs are cooked.
For our Tailgate Parties, we prepare this the night before in a disposable foil pan and heat it up at the Tailgate Party the next day.
